The final report of the LACTANOX project conducted by the team of young researchers from Comrat State University was presented to the Commission of the Academy of Sciences of the Republic of Moldova, Life Sciences Section. The report was evaluated by anonymous experts and received 24 points — rated “GOOD.” All objectives set within the framework of the LACTANOX project “Probiotic Dairy Product with High Antioxidant Activity” were fully achieved. The scientific contribution of the LACTANOX project consisted in developing a reproducible model for obtaining functional fermented dairy products through the use of indigenous symbiotic starter cultures, including EPS-producing strains, as well as through the application of polyfloral honey as an ingredient with antioxidant potential. The social impact of the project lies in expanding the range of fermented products with good sensory acceptability and enhanced functional potential, capable of supporting nutrition education and guiding consumers toward healthier food choices. The economic impact consists in creating a transferable technological prototype for local producers, with the potential to valorize domestic raw materials, reduce dependence on imported cultures, and increase the competitiveness of dairy products on the market.
