At the end of the first year of the LACTANOX project, the researchers of the Comrat State University achieved the following results and conclusions:
- Honey possesses high antioxidant activity. This opens up opportunities for its use as a functional product with potential health benefits.
- Biotechnologically active local symbiotic cultures of lactic acid bacteria, Streptococcus thermophilus and Lactobacillus bulgaricus, were selected during the research. These cultures have the potential for use in the production of probiotic dairy products.
- Optimal ratios of lactic acid bacteria cultures were determined to ensure the probiotic potential of the product.
These results will help in creating a dairy product with natural additives that possesses the desired functional properties, supporting the health of the intestinal microbiota. In 2024, the results were presented at conferences both in Moldova and abroad, at international exhibitions such as EXCELLENT IDEA – 2024 (Moldova, Chișinău), and EUROINVENT – 2024 (Romania, Iași), where they received silver medals. Thus, the first year of the LACTANOX project demonstrated significant progress in the development of a probiotic dairy product with natural additives. The successful combination of the antioxidant properties of honey and the probiotic potential of selected lactic acid bacteria cultures opens broad prospects for creating a functional product that promotes consumer health. Recognition of the results at international exhibitions and conferences confirms the high scientific level of the project and its potential significance for the food industry and healthcare
